Lemonade Mimosa

Guys, I'm 30 today!! I always feel like a little something bubbly, but for celebratory occasions, it's a must, right? I love mimosas, but I usually feel weird drinking them later in the day (I mean, it's a weekday, I've gotta keep it together here).

Enter the lemonade mimosa, the perfect drink for happy hours and hot summer nights that's equal parts fun and refreshing. 

It's super easy to make, and if you're feeling lazy you can even skip the sugared rim and it will take you about 3 seconds total.

Let's get to it! I've adapted the recipe adapted from here. This recipe makes 4-6 drinks.

2 lemons
1/2 c sugar
1 bottle champagne
2 c. lemonade

Zest one lemon and mix with sugar in a shallow dish. Cut the zested lemon into wedges. Run one wedge around rim of glass (preferably a champagne flute) and rim with zesty sugar.

Slice the other lemon into thin slices and either bend the slice and add to each glass or cut in half and use for garnish on the rim. Fill glasses halfway up with lemonade, then add the juice from a full lemon wedge into each glass, then top with champagne.

Easy peasy, summery, breezy.
